Tasting Event for 3D-Printed Sushi Held in Tokyo

Tasting Event for 3D-Printed Sushi Held in Tokyo

Tokyo, Dec. 8 (Jiji Press)--An event where participants was able to taste sushi made by a 3D printer was held at the National Museum of Emerging Science and Innovation in Tokyo's Koto Ward Sunday.
At the venue, pieces of 3D-printed sushi with paste-like imitation octopus made from minced fish placed on usual "shari" sushi rice were arranged on a table for participants to taste.
The 3D printer used at the event was developed by Hidemitsu Furukawa, professor at Yamagata University. The device processes powdered ingredients into a paste, which is then shaped through a nozzle. As powdered food can be stored for a long time, this innovative approach is expected to offer a potential solution for preventing food loss.
Some participants who tasted pieces of 3D-printed octopus sushi said that they looked similar to real octopus sushi, while others said that the topping somewhat lacked elasticity.
Ryoji Ogoshi, a company employee from Koto Ward who visited the event with his elementary school-aged son, said, "I felt this initiative was still developing as the sushi tasted like fish cake, but I thought it could be used as a nursing care food, which often needs to be made soft."
